Since St. Patrick's Day is on Sunday this year, and I work our church's nursery in the mornings and evenings, I needed to throw something together pretty quickly. We have returned to a house with an empty pantry and I haven't had time to go to the grocery store yet, but we did have some Bisquick and half a box of Lucky Charms left.
Enter....shamrock pancakes.

The kids were happy, full, and we got to celebrate a bit of the Irish....even though with are of Scottish descent. :)
